Beef Chart

**Meat from a typical side of beef consists of approximately the following amount of steaks, roasts and ground beef. For a quarter of a beef (if you split it with a friend or neighbor) you can cut these quantities in half.

4 to 6 Porterhouse steaks (1 1/4″ thick)
8 to 10 T-bone steaks (1 1/4″ thick)
8 to 10 Ribeye steaks (1 1/4″ thick)
6 to 8 Sirloin steaks (1 1/4″ thick)
4 to 6 Arm roasts
4 to 6 Chuck roasts
2 – Rump roasts
70 – 100 lbs Ground beef (1.5 lb packages)

**The amount of meat depends upon the size the beef. This is why we can only say what is “approximately” offered.

Note: We price our meat at what is called the “cut weight” – the weight after the beef has been dry-aged and all the fat and bones removed. Our price also includes all processing fees by the butcher.

Most other grass-fed beef farms sell by the hanging or pre-cut weight and slaughter cost is added. For comparison, our prices are approximately equal to $3.50 lb hanging weight.

A half a beef @ $8 per pound packaged weight.
